Ingredients
- Si Facile Yellow Peas, well rinsed and drained - 1 jar of 500 ml
- Diced Tomatoes - 1 can of 796 ml
- Diced Onions - 1
- Clove of Garlic, minced - 2
- Carrots, small diced - 3
- Stalk of Celery, small diced - 3
- Jalapeno, minced - 1
- Vegetable Broth - 3 cups
- Soy Sauce - 2 tbsp
- Sesame Oil - 1 tbsp
- Olive Oil - 2 tbsp
- Salt and Pepper - to taste
Preparation
- In a large saucepan, sweat the onion for a few minutes in the olive oil. Add the garlic and continue cooking for 2 minutes.
- Add the carrots, celery and jalapeno. Season with salt and pepper. Cook for 2 to 3 minutes, stirring frequently.
- Add the vegetable stock, yellow peas, tomatoes, soy sauce and olive oil.
- Bring to a boil. Reduce the heat and cover. Simmer for 15 minutes, or until the vegetables are cooked.
- Adjust the seasonings. Enjoy!
