Sandwich au pâté de pois chiches, cornichons et tomates

Chickpea, pickle and tomato pâté sandwich

Ingredients

  • Chickpeas Si Facile rinsed and drained - 1 jar of 500 ml
  • Tomatoes cut into cubes - 3/4 cup
  • Shallot minced - 1
  • Pickles cut into small cubes - 1/3 cup
  • Sunflower seeds - 1/4 cup
  • Mayonnaise - 1/4 cup
  • Bread - 4 slices
  • Butter - 2 tbsp
  • Lettuce leaf for serving
  • Salt and pepper to taste

Preparation

  1. In a large bowl, mash the chickpeas with a fork. Do not mash too much to keep some texture! Personally, I keep some whole.
  2. Add the tomatoes, onion, pickles or olives, sunflower seeds, mayonnaise, salt and pepper. Mix well.
  3. In a pan with the butter, toast the slices of bread.
  4. Assemble the sandwich and enjoy!
