Ingredients
- Si Facile Red Beans, well rinsed and drained - 1 jar of 500 ml
- Olive oil - 2 tbsp
- Onion, diced - 1
- Garlic cloves, minced - 3
- Jalapeno pepper, diced - 1
- Fresh ginger, minced - 1 tbsp
- Tomato, diced - 1 small
- Cumin - 1 tbsp
- Curry - 1 tbsp
- Garam masala - 1 tbsp
- Ground coriander seed - 1 tsp
- Spinach - 300g
- Fresh coriander - 1 bunch
- Vegetable broth - 2 cups
- Plain yogurt - ¼ cup
- Cooked potatoes, diced - 2
- Halloumi cheese, diced - 200g (or paneer cheese)
- Salt and pepper - to taste
- Naan bread - (for serving, optional)
Preparation
- In a large skillet, brown the onions in the oil until golden brown.
- Add the garlic, chili pepper and ginger. Continue cooking for 3 minutes, stirring.
- Add the tomatoes, cumin, curry powder, garam masala and coriander seeds. Season with salt and pepper. Continue cooking for 2 minutes, stirring.
- Add the spinach, coriander and vegetable broth. Bring to a boil and boil, stirring occasionally, until the spinach is cooked, about 5 minutes.
- Reduce the mixture
- Add the kidney beans, yogurt, potatoes and cheese. Mix well. Continue cooking for about 5 minutes until everything is heated through.
