Ingredients
- Si Facile Yellow Peas, well rinsed and drained - 1 jar of 500 ml
- Onions, finely diced - 1
- Garlic cloves, minced - 3
- Vegetable (or chicken) broth - 1 cup
- Cherry tomatoes - 2 cups
- Basil leaves - 1/2 cup (keep a few for serving)
- Thyme sprigs - 2
- Jalapeno, minced - 1
- Olive oil - 2 tbsp
- Salt and pepper - to taste
Preparation
- In a saucepan, brown the onion in olive oil. Add the garlic and continue cooking for 2 minutes.
- Add the broth, tomatoes, basil, thyme, jalapeno and yellow peas. Season with salt and pepper. Simmer over low heat for about fifteen minutes or until the tomatoes are cooked and the liquid has evaporated. Enjoy!
Notes
- Very good served over quinoa or rice with grilled vegetables!
