Ingredients
- Si Facile Beans, well rinsed and drained - 1 jar of 500 ml
- Chopped shallot - 1
- Chopped garlic cloves - 2
- Chopped hot pepper (to taste) - 1
- Beaten eggs - 4
- Chili powder - 1 tbsp
- Lime juice - 1 tbsp
- Lettuce leaves
- Grated cheese - 1 cup
- Cilantro leaves - to taste
- Salt and pepper - to taste
- Olive oil - 2 tbsp
- Large tortillas - 4
- Spicy mayonnaise for serving (optional)
Preparation
- In a large skillet, cook the shallots in the oil for a few minutes. Add the garlic and hot pepper. Continue cooking for 2 minutes.
- Add the eggs and chili. Stir constantly until the scrambled eggs are cooked. Season with salt and pepper. Add the lime juice.
- Add the red beans and mix well. Turn off the heat.
- It’s time to assemble. On the tortillas, place the lettuce leaves, the bean and egg mixture, the grated cheese and the cilantro.
- Grill the burrito in a panini grill or on a skillet.
- Serve with the spicy mayonnaise. Enjoy!
