Burritos déjeuner aux oeufs, haricots rouges et coriandre

Breakfast burritos with eggs, red beans and cilantro

Ingredients

  • Si Facile Red Beans, well rinsed and drained - 1 jar of 500 ml
  • Chopped shallot - 1
  • Chopped garlic cloves - 2
  • Chopped hot pepper (to taste) - 1
  • Beaten eggs - 4
  • Chili powder - 1 tbsp
  • Lime juice - 1 tbsp
  • Lettuce leaves
  • Grated cheese - 1 cup
  • Cilantro leaves - to taste
  • Salt and pepper - to taste
  • Olive oil - 2 tbsp
  • Large tortillas - 4
  • Spicy mayonnaise for serving (optional)

Preparation

  1. In a large skillet, cook the shallots in the oil for a few minutes. Add the garlic and hot pepper. Continue cooking for 2 minutes.
  2. Add the eggs and chili. Stir constantly until the scrambled eggs are cooked. Season with salt and pepper. Add the lime juice.
  3. Add the red beans and mix well. Turn off the heat.
  4. It’s time to assemble. On the tortillas, place the lettuce leaves, the bean and egg mixture, the grated cheese and the cilantro.
  5. Grill the burrito in a panini grill or on a skillet.
  6. Serve with the spicy mayonnaise. Enjoy!
