Ingredients
- Yellow peas Si Facile well rinsed and drained - 2 jars of 500 ml
- Chopped onions - 2
- Chopped garlic cloves - 2
- Large carrots cut into small cubes - 2
- Celery cut into small cubes - 2 stalks
- Bacon cut into lardons - 300g
- Vegetable (or chicken) broth - 4 cups
- Bay leaves - 2
- Butter - 2 tbsp
- Salt and pepper - to taste
- Sprig of thyme - for serving
Preparation
- Cook the bacon in the oven or in a pan. Drain the bacon and set aside.
- In a large saucepan, brown the onion in the butter. Add the garlic and continue cooking for 2 minutes.
- Add the carrots and celery. Continue cooking for 5 minutes.
- Add the broth, half of the yellow peas and the bay leaves. Season lightly with salt and pepper.
- Cover, bring to a boil and simmer for about fifteen minutes. Add the other half of the yellow peas. Continue cooking for about fifteen minutes covered. Remove the bay leaves.
- Add salt and pepper to taste.
- Divide the bacon and a sprig of thyme over each bowl. Enjoy!
