Ingredients
- Yellow peas Si Facile well rinsed and drained - 1 jar of 500 ml
- Small diced onions - 1
- Minced garlic cloves - 3
- Vegetable (or chicken) broth - 1 cup
- Cherry tomatoes - 2 cups
- Basil leaves - 1/2 cup (keep some for serving)
- Thyme sprigs - 2
- Minced Jalapeno - 1
- Olive oil - 2 tbsp
- Salt and pepper - to taste
Preparation
- In a saucepan, brown the onion in olive oil. Add the garlic and continue cooking for 2 minutes.
- Add broth, tomatoes, basil, thyme, jalapeno and yellow peas. Season with salt and pepper. Simmer over low heat for about 15 minutes or until tomatoes are cooked and liquid has evaporated. Enjoy!
Notes
- Very good served over quinoa or rice with grilled vegetables!
