Ingredients
- Si Facile Red Beans, well rinsed and drained - 500 ml
- Olive oil - 2 tbsp
- Diced onion - 1
- Minced garlic cloves - 3
- Jalapeno pepper, diced - 1
- Minced fresh ginger - 1 tbsp
- Diced tomato - 1 small
- Cumin - 1 tbsp
- Curry - 1 tbsp
- Garam masala - 1 tbsp
- Ground coriander seed - 1 tsp
- Spinach - 300 g
- Fresh coriander - 1 bunch
- Vegetable broth - 2 cups
- Plain yogurt - ¼ cup
- Cooked potatoes, diced - 2
- Diced halloumi cheese - 200g (or paneer cheese)
- Salt and pepper - to taste
- Naan bread - (for serving, optional)
Preparation
- In a large skillet, brown the onions in the oil until golden brown.
- Add the garlic, chilli and ginger. Continue cooking for 3 minutes, stirring.
- Add tomatoes, cumin, curry, garam masala and coriander seeds. Season with salt and pepper. Continue cooking for 2 minutes, stirring.
- Add spinach, cilantro and vegetable broth. Bring to a boil and cook, stirring occasionally, until spinach is cooked, about 5 minutes.
- Reduce the mixture
- Add the red beans, yogurt, potatoes and cheese. Mix well. Continue cooking for about 5 minutes until everything is heated through.
- The dish is delicious when served with naan bread. Enjoy!
