Burritos déjeuner aux oeufs, haricots rouges et coriandre

Breakfast burritos with eggs, red beans and cilantro

Ingredients

  • Si Facile Red Beans, well rinsed and drained - 1 jar of 500 ml 
  • Chopped French shallot - 1
  • Chopped garlic cloves - 2
  • Chopped hot pepper (to taste) - 1
  • Beaten eggs - 4
  • Chili powder - 1 tbsp
  • Lime juice - 1 tbsp
  • Lettuce leaves
  • Grated cheese - 1 cup
  • Coriander leaves - to taste
  • Salt and pepper - to taste
  • Olive oil - 2 tbsp
  • Large tortillas - 4
  • Spicy mayonnaise for serving (optional)

Preparation

  1. In a large skillet, cook the shallots in the oil for a few minutes. Add the garlic and hot pepper. Continue cooking for 2 minutes.
  2. Add eggs and chili. Stir constantly until scrambled eggs are cooked. Season with salt and pepper. Add lime juice.
  3. Add the red beans and mix well. Turn off the heat.
  4. It's assembly time. On the tortillas, place the lettuce leaves, the bean and egg mixture, the grated cheese and the cilantro.
  5. Grill the burrito in a panini grill or on a skillet.
  6. Serve with spicy mayonnaise. Enjoy!
