Salade de quinoa, haricots noirs, raisins et fromage halloumi

Quinoa, black bean, grape and halloumi cheese salad

Preparation time : 10 minutes
Cooking time : 20 minutes
Servings : 4

Ingredients

  • Si Facile Black Beans, well rinsed and drained - 1 jar of 500 ml 
  • Quinoa - 1 cup
  • Vegetable broth - 2 cups (or water)
  • Bay leaves - 2 (optional)
  • Shallot, minced - 1 large
  • Chopped garlic cloves - 2
  • Green grapes, halved - 2 cups
  • Lime juice - 2 tbsp
  • Cayenne pepper - 1 tsp
  • Salt and pepper - to taste
  • Olive oil - 2 tbsp
  • Halloumi cheese - 190g cut into strips (or grilling cheese)

Preparation

  1. In a medium saucepan, place quinoa, vegetable broth, and bay leaves. Cover. Bring to a boil, then reduce heat to low and simmer for 15 to 20 minutes (until liquid is completely absorbed). Remove bay leaves.
  2. In a large bowl, combine all ingredients except halloumi. Refrigerate until ready to serve.
  3. In a skillet over medium-high heat, grill the halloumi on both sides.
  4. Divide the salad between four plates and top with the halloumi. Enjoy!

Notes

You can replace the quinoa with couscous or another type of grain!
