Ingredients
- Si Facile Black Beans, well rinsed and drained - 1 jar of 500 ml
- Quinoa - 1 cup
- Vegetable broth - 2 cups (or water)
- Bay leaves - 2 (optional)
- Shallot, minced - 1 large
- Chopped garlic cloves - 2
- Green grapes, halved - 2 cups
- Lime juice - 2 tbsp
- Cayenne pepper - 1 tsp
- Salt and pepper - to taste
- Olive oil - 2 tbsp
- Halloumi cheese - 190g cut into strips (or grilling cheese)
Preparation
- In a medium saucepan, place quinoa, vegetable broth, and bay leaves. Cover. Bring to a boil, then reduce heat to low and simmer for 15 to 20 minutes (until liquid is completely absorbed). Remove bay leaves.
- In a large bowl, combine all ingredients except halloumi. Refrigerate until ready to serve.
- In a skillet over medium-high heat, grill the halloumi on both sides.
- Divide the salad between four plates and top with the halloumi. Enjoy!
Notes
You can replace the quinoa with couscous or another type of grain!
