Couscous, feta, black bean and strawberry salad

Ingredients

  • Si Facile Black Beans, well rinsed and drained - 1 jar of 500 mL 
  • Couscous - 2 cups
  • Chopped garlic cloves - 2
  • Thinly sliced ​​French shallots - 2
  • Lemon juice - 2 tbsp
  • Chili flakes - 1 tsp
  • Sliced ​​strawberries - 18
  • Crumbled feta - 200g
  • Chopped mint leaves - 15
  • Green onions, cut into small rings - 2
  • Olive oil - 2 tbsp
  • Salt and pepper to taste

Preparation

  1. Cook the couscous according to the brand's instructions.
  2. In a large bowl, combine couscous, garlic, shallots, olive oil, lemon juice and chili flakes. Season with salt and pepper. Mix well.
  3. Add black beans, strawberries, feta, mint and green onions. Mix well and enjoy!
