Ingredients
- Si Facile Red Beans, well rinsed and drained - 1 jar of 500 ml
- Si Facile Black Beans, well rinsed and drained - 1 jar of 500 ml
- Olive oil - 2 tbsp
- Onion, diced - 1 large
- Chopped garlic cloves - 3
- Drained diced tomatoes - 1 can 796 ml
- Carrots cut into small cubes - 2 large
- Mushrooms, sliced - 6 to 8
- Chili - 4 tbsp
- Cumin - 1 tbsp
- Juice of one lime
- Zest of a lime
- Salt and pepper - to taste
- Fresh coriander - to taste for serving (optional)
- Sour cream - to taste for serving (optional)
Preparation
- In a large saucepan over medium heat, cook the onions in the oil for about 10 minutes. Add the garlic and continue cooking for 2 minutes.
- Add tomatoes, beans, carrots, mushrooms, chili, cumin, lime juice and zest to pot. Season with salt and pepper. Simmer 15 minutes or until vegetables are cooked.
- Assemble and serve! Enjoy!
