Soupe aux pois jaunes réconfortante avec bacon

Comforting Yellow Pea Soup with Bacon

Ingredients

  • Yellow Peas Si Facile, well rinsed and drained - 2 jars of 500 ml
  • Onions, chopped - 2
  • Chopped garlic cloves - 2
  • Large carrots, cut into small cubes - 2
  • Celeries, cut into small cubes - 2 stalks
  • Bacon, cut into lardons - 300g
  • Vegetable broth (or chicken) - 4 cups
  • Bay leaves - 2
  • Butter - 2 tbsp.
  • Salt and pepper - to taste
  • Sprig of thyme - for serving

Preparation

  1. Cook the bacon in the oven or in a pan. Drain the bacon and set aside.
  2. In a large saucepan, brown the onion in the butter. Add the garlic and continue cooking for 2 minutes.
  3. Add the carrots and celery. Continue cooking for 5 minutes.
  4. Add the broth, half of the yellow peas and the bay leaves. Season lightly with salt and pepper.
  5. Cover, bring to a boil and simmer for about 15 minutes. Add the other half of the yellow peas. Continue cooking for about 15 minutes, covered. Remove the bay leaves.
  6. Add salt and pepper to taste.
  7. Distribute the bacon and a sprig of thyme on each of the bowls. Enjoy!
