Ingredients
- Si Facile Black Beans, well rinsed and drained - 1 jar of 500 mL
- Couscous - 2 cups
- Chopped garlic cloves - 2
- Shallots, minced - 2
- Lemon juice - 2 tbsp
- Chili flakes - 1 tsp
- Sliced strawberries - 18
- Crumbled feta - 200g
- Mint leaves, chopped - 15
- Sliced green onions - 2
- Olive oil - 2 tbsp
- Salt and pepper to taste
Preparation
- Cook couscous according to brand directions.
- In a large bowl, combine couscous, garlic, shallots, olive oil, lemon juice and chili flakes. Season with salt and pepper. Mix well.
- Add black beans, strawberries, feta, mint and green onions. Mix well and enjoy!
