Purée de pois chiche et chou-fleur avec oignons caramélisés

Chickpea and cauliflower purée with caramelized onions

Ingredients

  • Si Facile chickpeas, well rinsed and drained - 1 jar of 500 ml
  • Olive oil - 2 tbsp
  • Yellow onions cut into strips - 2
  • Cauliflower in small florets - 4 cups
  • Minced garlic cloves - 2
  • Butter - 3 tbsp
  • Salt and pepper - to taste

Preparation

  1. In a pan, caramelize the onions in olive oil. Stir frequently.
  2. Steam cauliflower, chickpeas and garlic for 20 minutes or until cauliflower is tender.
  3. Using a food processor, puree the steamed vegetables and butter until smooth. Salt and pepper.
  4. Divide between plates, adding the caramelized onions on top of the puree. Enjoy!
