Ingredients
- Si Facile pinto beans, well rinsed and drained - 1 jar of 500 ml
- Diced onion - 1
- Olive oil - 2 tbsp
- Chopped garlic cloves - 2
- Spinach - 300 g
- Peeled and diced potatoes - 2
- Lemon juice - 3 tbsp
- Vegetable broth - 4 cups
- Cumin – 1 tbsp
- Chopped hot pepper of your taste - 1 (optional)
- Salt and pepper - to taste
Preparation
- In a large saucepan, caramelize the onions in the olive oil. Add the garlic and continue cooking for 2 minutes. Add pinto beans, spinach, potatoes, lemon juice, vegetable stock, cumin and hot pepper. Salt and pepper.
- Bring to a boil. Reduce the heat and cover. Simmer for 15 minutes, or until the potatoes are cooked.
- Reduce to a homogeneous soup using an electric blender. Enjoy!
