Potage aux épinards et haricots pinto

Spinach and Pinto Bean Soup

Ingredients

  • Si Facile pinto beans, well rinsed and drained - 1 jar of 500 ml
  • Diced onion - 1
  • Olive oil - 2 tbsp
  • Chopped garlic cloves - 2
  • Spinach - 300 g
  • Peeled and diced potatoes - 2
  • Lemon juice - 3 tbsp
  • Vegetable broth - 4 cups
  • Cumin – 1 tbsp
  • Chopped hot pepper of your taste - 1 (optional)
  • Salt and pepper - to taste

Preparation

  1. In a large saucepan, caramelize the onions in the olive oil. Add the garlic and continue cooking for 2 minutes. Add pinto beans, spinach, potatoes, lemon juice, vegetable stock, cumin and hot pepper. Salt and pepper.
  2. Bring to a boil. Reduce the heat and cover. Simmer for 15 minutes, or until the potatoes are cooked.
  3. Reduce to a homogeneous soup using an electric blender. Enjoy!
