Yellow pea hummus with pomegranate and parsley

Ingredients

  • Si Facile Yellow Peas, well rinsed and drained - 1 jar of 500 ml 
  • Chopped garlic cloves - 2
  • Small French shallot, halved - 1
  • Tahini butter - 1/4 cup
  • Lemon juice - 3 tbsp
  • Olive oil - 2 tbsp
  • Water - 1/4 cup
  • Seeds of 1 pomegranate
  • Fresh parsley leaves - 1 cup
  • Salt and pepper - to taste

Preparation

  1. In an electric blender, puree the yellow peas, garlic, shallot, tahini butter, lemon juice, olive oil and water until smooth. Season with salt and pepper.
  2. Place the mixture in a bowl.
  3. Sprinkle the pomegranate seeds and fresh parsley over the hummus. Drizzle with olive oil.
  4. Enjoy with a baguette, in a pita, etc.!
